The Lazy Meatloaf Recipe

Easy Lazy Meatloaf Recipe


Do you have any breakfast corn flakes or weetabix just sitting around in your pantry?

Read on for the recipe...

To get started, preheat the oven at 400 degrees

You will need a 5x9 inch loaf pan (greased with a little oil for non-stick), if you have those silicone loaf pans that will be even better as it is a non-stick less fuss process.

Also one large mixing bowl.

Ingredients:
500g mince meat (beef, or turkey meat)
2 fresh tomatoes, diced into small cubes
2 stalks of fresh celery, diced into small cubes
2 weetabix crunched into flakes or use corn flake cereals 1 handful, crushed
1 egg
1 cup of bread crumbs, or half handful of cut up 1 day old bread
#1) 1 & half teaspoon of salt
#2) 1 teaspoon of black pepper powder
#3) 1 teaspoon of cloves powder
#4) 1 teaspoon of chili powder or cayenne chili powder
#5) 2 teaspoons of onion powder
#6) 2 teaspoons of garlic powder
#7) 1 tablespoon of dried oregano herb
#8) 1 tablespoon of dried rosemary herb
#9) 1 tablespoon of beef or chicken stock flavoring (dry powder or wet type)

Steps:
Using a large mixing bowl, put in the minced meat, one egg and mix well until evenly mixed.
Add all the teaspoons of flavourings/dried powders and herbs into the mix (9 types in total), stir until evenly mixed.
Then add the diced fresh tomatoes and celery, and 2 weetabix or corn flakes cereal into the mix, stir well until evenly mixed.

Place this mix into your loaf pan, and into the oven. Bake for 50 to 60 minutes until top is slightly brown and crusty and smells empoweringly ready to come out. 

To add a coating of sauce over the top of the baked meatloaf; 
In a bowl, add 1/4 cup or 4 tablespoons of brown sugar (or alternatively honey/or pancake syrup), add 1/4 cup or 4 tablespoon of boiled water, mix well. 
Then add half cup of tomato ketchup, half teaspoon of nutmeg powder and 1 tablespoon of yellow mustard sauce, mix well, spread to coat this evenly over the top of the meatloaf and enjoy!
